in all honesty, i don't understand.
Simple connotes a piece of communication that is elegant, smart, insightful and stripped of superfluous decorations. Often, simple work hits you on the back of the head just as you finish reading/looking at it.
Simplistic work, on the other hand, is an ersatz imitation of simplicity, devoid of insight and notable only for its lack of sophistication.

The difference between simplicity and simple is like the difference between a polished turd and a polished gem. The polish removes the extraneous details making it exact. Exactly a turd; or, exactly a gem.
At least the word turd makes me laugh.
